Refreshingly unoaked This was brought around by some friends the other night and is a really nice, simple example of a Chablis. It's light and minerally with lots of citrus flavours and a really delicious backbone of acidity. There's no oak in sight, which is perfect for people who are tiring of the overpowering Aussi mass-produced efforts. This Chablis goes extremely well with pan-fried scallops! Lucky then that this is both nice and a Chablis, and has therefore won my favour and that of my friends and family as well. For me, much of the refreshment stems from the fact that it's un-oaked, and you can really taste the subtle citrus fruit notes and are then provided with a delicious mouthwatering acidity.
